Basque burnt (on purpose) cheesecake recipe

Eu nu sunt fan cheesecake. Desi e o reteta simpla si combinatiile sunt nenumarate, pentru orice gust, nu am simtit o provocare in a face cheesecake.

De ceva timp imi apar pe Instagram tot mai multe poze cu “burnt cheesecake” si recunosc ca ma atrage ideea de a arde intentionat o prajitura 😈 . Iar faptul ca nu are blat m-a convins sa-l fac (nu-mi place blatul de biscuiti).

Rezultatul a fost wow, peste asteptarile mele. Desi *le husband nu crede ca l-am ars intentionat 😀 , a recunoscut ca i-a placut mult (mai ales ca l-a combinat cu sos de caramel sarat, homemade evident 😉 ).

IngredientE

  • 200g crema de branza Philadelphia

  • 150ml smantana de gatit

  • 100g zahar

  • 3 oua de marime medie

  • 25g faina

  • un varf de lingurita praf de copt

  • 2 lingurite esenta vanilie

Instructiuni

  • Intr-un bol am mixat crema de branza cu zaharul pana cand zaharul s-a topit.
  • Am adaugat cate un ou pe rand si am mixat dupa fiecare ou pana s-a incorporat integral.
  • Am adaugat restul ingredientelor si am mixat foarte putin, pana cand compozitia s-a omogenizat.
  • Am tapetat o forma rotunda cu diametrul de 16cm cu hartie de copt si am turnat compozitia.
  • Am bagat tava in cuptorul preincalzit la 210°C timp de aproximativ 50 de minute. In ultimele 2 minute am schimbat functia cuptorului si am setat directia caldurii de sus, incat sa se formeze crusta “arsa”.
  • Cand a fost gata, am lasat sa se raceasca la temperatura camerei, apoi am bagat cheesecake-ul in frigider pentru cateva ore.

  • 200g Philadelphia cream cheese

  • 150ml heavy cream

  • 100g sugar

  • 3 medium size eggs

  • 25g flour

  • 1/4 tsp baking powder

  • 2 tsp vanilla extract

Directions

  • Mix cream cheese and sugar in a bowl until the sugar has dissolved.
  • Add eggs one at a time, mixing each egg a few seconds before adding the next.
  • Add the rest of ingredients and mix until combined.
  • Prepare a pan of a 16cm diameter with parchment paper and pour the batter into the pan.
  • Bake for approximately 50 minutes in the preheated oven to 210°C. For the last 2 minutes, switch the heat of the oven from top to bottom to achieve that ‘burnt’ look.
  • When ready, take the pan out of the oven and let it cool. Place it into the fridge for a few hours before serving.
