Reteta Briose cu Caramel si Marshmallows / Caramel – Marshmallow Cupcakes

Am primit o semi-provocare sa fac un desert fara ciocolata. Si spun “semi’ pentru ca stiam ca acest desert va ajunge mai mult la copii si mai putin la adulti, iar copiii iubesc ciocolata 😋. Dar ce e next best thing dupa ciocolata? Caramelul! 💡 Asa ca m-am pus pe treaba si a iesit o reteta atat gustoasa cat si interesanta ca aspect.

Am facut aceasta reteta acum cateva saptamani, dar n-am apucat sa o postez pentru ca am fost ocupata cu testarea altor retete. Briosele au fost devorate in cateva minute de catre ursuleti si prietenii lor, motiv pentru care am decis ca-si merita locul pe blog.

IngredientE

  • Aluat briose
  • 3 oua

  • 50g unt + 100ml ulei

  • 120g zahar (6 linguri)

  • 150g faina (7 linguri)

  • 100ml lapte

  • 30g faina de migdale

  • 5g praf de copt (1/2 plic)

  • Caramel
  • 120g zahar

  • 150ml smantana de gatit (cel putin 20% grasime) la temperatura camerei

  • 50g unt

  • Decor
  • 20g fulgi de migdale (i-am copt 5 minute in cuptor)

Instructiuni

  • Prepararea brioselor
  • Intr-un bol, am mixat ouale cu zaharul pana si-au dublat volumul si zaharul s-a topit.
  • Am adaugat uleiul si untul topit, putin cate putin, in timp ce am continuat sa mixez compozitia.
  • Am adaugat laptele, faina cernuta impreuna cu praful de copt si am amestecat cu o lingura de lemn.
  • Am turnat compozitia cu o lingura in forme de briose, au iesit 20.
  • Am bagat tava in cuptorul preincalzit la 180°C timp de 20 minute.
  • Le-am scos din cuptor si le-am lasat sa se raceasca.
  • Preparare caramel
  • Am pus zaharul intr-o cratita pe foc, la foc mic pana s-a topit si caramelizat (atentie sa nu se arda).
  • Am adaugat untul si smantana de gatit si am amestecat rapid pana s-au incorporat.
  • Am lasat sa fiarba timp de 5 minute si apoi am dat deoparte sa se raceasca.
  • Asamblare
  • Cu ajutorul unui con, am facut o gaura in mijlocul briosei pentru a face loc caramelului 🙂 .
  • Am pus caramel, apoi am presarat cativa fulgi de migdale si deasupra am asezat un marshmallow.
  • Cu ajutorul unei torte am caramelizat marshmallow-ul.

  • 3 eggs

  • 50g butter + 100ml vegetable oil

  • 120g sugar (6 Tbsp)

  • 150g all-purpose flour (7 Tbsp)

  • 100ml milk

  • 30g almond flour

  • 5g baking powder

  • Caramel
  • 120g sugar

  • 150ml heavy cream at room temperature

  • 50g butter

  • Decor
  • 20g almond flakes, baked in the oven

  • marshmallows

Directions

  • Muffins
  • In a large bowl, mix the eggs and sugar until double in size.
  • Pour the oil and the melted butter while mixing.
  • Add the milk, sift the flour and baking powder. Use a wooden spoon to mix thoroughly.
  • Spoon into paper-lined muffin tins. The dough was enough for 20 muffins.
  • Bake for 20 minutes in a preheated oven to 180°C. 
  • Remove the muffins from the tin and let them cool.
  • Caramel
  • Place the sugar in a saucepan over low heat. Keep an eye on the sugar, stirring it every few minutes until it melts, make sure the sugar is not burnt.
  • Add butter to the melted sugar and stir to combine, then add the heavy cream and stir until completely combined.
  • Let it boil for about 5 minutes and then set aside to cool.
  • Muffin assembly
  • With a cone tip, press the middle of the muffin to make room for the caramel 🙂 .
  • With a spoon add caramel, then sprinkle some almond flakes and add a marshmallow on top.
  • Torch the marshmallow.
